Citric acid is an important organic acid. It is colorless crystals, odorless, has a strong sour taste, is easily soluble in water, and is a natural preservative and food additive. There are two types: anhydrous and monohydrate.

Application

 

1) In Food Industry: About 50% used in beverages & 20% in other food applications.
- An acidity regulator.
- A flavor enhancer and sequestering agent in processed food and beverages.
- A synergist in antioxidant mixtures.
- A preservative.

2) Detergents: Around 20% of global citric acid production goes in detergents applications.

3) Other Applications: About 10%
- Cosmetics.
- Pharmaceutical preparations especially effervescent tablets.
