Maltitol is also called hydrogenated maltose. Maltitol is a white crystalline powder or a colorless transparent neutral viscous liquid, easily soluble in water, insoluble in methanol and ethanol. Maltitol is a new type of functional sweetener, which has attracted wide attention for its low-calorie, no tooth decay, easy digestion, and promotion of calcium absorption.

Features

1. With a sweetness of about 45% - 65% of sucrose
2. Slightly hygroscopic, melting range 145~150 ºC
3. Soluble in water, its solubility in water is lower than that of sucrose at room temperature, and it can be close to sucrose after heating, but it is insoluble in ethanol.

Application

(1) Application in food

(2) For candy and chocolate production
It can be used to make candy, including foamed marshmallow, hard candy, transparent soft candy, etc.

(3) Application in fruit juice drinks
When manufacturing suspended fruit juice drinks or lactic acid drinks, maltose alcohol is added to replace * a part of granulated sugar to make the drink taste smooth.

(4) Application in frozen food
Maltitol is used in ice cream to make the product delicate and thick.

As a food additive, maltitol is allowed to be used in cold drinks, cakes, fruit juices, biscuits, bread, pickles and sweets
